That will function in the range of very high temperature pyrotechnic compositions. Such as those utilizing high portions of Strontium Nitrate, Barium nitrate & Mg/Al? Thanks for any help.

Those infrared thermometers aren't really suitable for the task. They assume black body radiation, whereas your burning comps will be producing excess infrared light, which will confuse the sensor. If the composition were pressed into a metal tube (open-ended of course), you might be able to ball-park the temperature by pointing the thermometer at the outside of the casing adjacent to the burn front however.
