All of human technological evolution is literally based on our ability to turn iron oxide back into iron. You could do it using bloomery, but that is extremely time and labor intensive (which is why iron tools used to cost so damn much). Go look it up if you want to know just how much work it takes. Thermite reaction isn't really used to refine iron though, because aluminum didn't really exist in antiquity, and until fairly recently, was more expensive than gold! Besides that it's also not cost effective to do. 1

I work at a sheet metal galvanizing plant and we use carbon monoxide gas to remove rust and the natural oxide layer on our sheet metal (in a continious strip of sheet metal) prior to dipping it in a liquid bath of zinc. The carbon monoxide takes the oxide from FeO turning into Carbon dioxide and Fe. 1
