Richtee Posted February 8, 2022 Posted February 8, 2022 Are REALLY handy chems! 4 “picnic” (Front leg) hams just laid down in cure for a month-ish. Easter’s a’comin! 1
MadMat Posted February 8, 2022 Posted February 8, 2022 It's funny you should mention this, because I am about to do the same exact thing real soon! There's a local store around here that has a number of pork cuts on sale. Picnic and shanks are two of them.
Richtee Posted April 10, 2022 Author Posted April 10, 2022 Well, next weekend’s the big deal. 23 people coming to dinner. Here’s the stars... Pork nitrate!

SharkWhisperer Posted April 10, 2022 Posted April 10, 2022 Christ..I can’t imagine a better smelling BP. Dunno, I granulated some BP with 151 rum at the start of covid when the shelves were stripped of isopropyl alcohol....granules shure smelled nice, even after thorough drying. Smoke still smelt like pure BP, though. Some BBQ-smelling BP smoke could be mighty fine, though!
