MadMat Posted April 28, 2018 Posted April 28, 2018 My friend and I did our first competition of the season in Iowa on the 7th. It was a backyard type comp and they were doing a fund-raiser as well. The up-side was the meat was supplied. The down-side was we had to cook a lot (15 racks of ribs). Still, it was a good little starter for the season. Our ribs took second out of 25 competitors! The only problem was the temperature. When we got there and started to set-up, the temperature was 14 F!

Alot of that color/contrast is due to me using pre-cooked chorizo sausage..VERY deep red with seasonings..as the stuffing.I cooked the crumbled sausage, cooled and added chopped green onion and grated cheddar. Filled the Jap halves and bacon wrapped.
